How do you count the sharps and flats of a note, in classical guitar music?

ya90ya: I am trying to comprehend how to correctly indicate the key signature of a piece.
So far I know the order of the sharps is:
F#, #C, #G, #D, #A, #E, #B
And the order of the flats is the same but staring from B, so B, E, A, etc…

If I can think a note (like C, G, Bb) and then sing that note, does that mean I have perfect pitch?
